Another day, another pop-up. Or it certainly seems that way. Having said that, we certainly aren’t complaining – pop-ups seem to have the kind of ‘cool factor’ that a stand-alone restaurant can rarely achieve. There’s something about feeling in-the-know that makes you feel like you can visit places every other Tom, Dick and Harry don’t yet know about.
Cuisson, the people behind POP-Down are getting a bit of a name for themselves for turning the standard street-food-style pop-up on it’s head and injecting a bit of luxury and innovation, this time to a three month gastronomical residency at the Vaults in Waterloo. Throughout the residency the four-course menu will vary, with seasonal produce as well as a few surprises – a bit of a Cuisson trademark. The whole menu promises to stimulate your senses and satisfy your stomach with nice little touches like horseradish snow and brown butter brittle and a bar serving cocktails until 2am. Once you POP-down to Waterloo, and down the stairs (sorry, couldn’t resist), you will get to be part of a culinary adventure with experimental dishes prepared in an open central kitchen from which guests are invited to get involved and help garnish their dinners to their liking.
