As the mercury rises it seems that we do too. Who knows exactly why summer has us rushing to the nearest rooftop bar (even when they’re indoor) but when the rooftop in question consists of an outdoor terrace it all starts making sense. Skylounge at DoubleTree by Hilton London – Tower of London is launching its summer residency on 1st June and it takes the form of a laid-back Californian beach bar.
The Santa Monica summer pop-up has food and drink at its core; whilst Californians aren’t shy of a burger they will also have chips of the kale variety. We prefer our 5-a-day in liquid form so you’ll find us sipping pineapple mimosas (by the jug) and maybe a few frozen margaritas if we need cooling down. Fresh and healthy, the food is also a little bit decadent – we’re all about balance. Mexican influences show in the choice of quesadila’s, tostadas and fish tacos, whilst octopus skewers and salmon maki rolls are a little bit Asian. This all sounds great but where they’ve really caught our attention is with churros with salted caramel sauce and deep-filled doughnuts. You have all summer long to experience Santa Monica without the jet lag and actually, with views of The Shard and The Gherkin it’s really quite a favourable option.
