So the weather may be a bit hit and miss at the moment (read: hit at time of publication, might be miss if you read this tomorrow) but one thing that is sizzling for certain is the new BACARDÍ Summer Terrace at The Rib Room Bar. Launching 20th May guests will be able to give in to the Latin vibes with a range of carefully crafted cocktails, inventive bar bites and live Latin music.
The pop-up will of course feature several nods to the world-famous rum brand, namely the cocktails like Papa Was Right, an exotic combination of BACARDÍ Carta Blanca, pomegranate and Maraschino liqueur finished with a generous pour of pineapple shrub and grapefruit juice, but also BACARDÍ heritage photography, vintage cocktail-ware and other touches evoking the Santiago de Cuba origins of BACARDÍ.
Snacks on the menu will include a selection light bights infused with Latin flavour from Rib Room Head Chef Ian Rudge like Beef empanadas served with jalapeño sour cream; Cuban sandwiches made with slow-cooked spiced pork and ham; and Camarones criollos – grilled king prawns in a tomato and chilli sauce with coriander.

The BACARDÍ Summer Terrace will be open 7.30pm to 11pm on Wednesdays to Saturdays.
