When it comes to poultry in London then chicken seems to take the centre stage, just as gin dominates the drinks world, chicken dominates the bird world. Well now the understated vodka of the poultry world is making itself heard, we’re talking about duck and today will see the opening of Duck ‘n’ Roll in Camden market.
A street food venture set up by Michelin-starred chef Pascal Aussignac and his business partner Vincent Labeyrie, this will be the third permanent site for the restaurant that champions duck – you’ll also find them at #Dinerama in Shoreditch and Trinity Kitchen in Leeds. It’s going to be the biggest and best yet – just what we like to hear.
The Club Gascon chef will be taking inspiration from his roots in Gascony as well as Asian flavours to create the likes of a duck burger topped with Ossau-Iraty cheese, balsamic onions and a spicy tomato sauce served with duck fat fries; the foie gras and truffle burger; a pulled duck bun with BBQ sauce, crispy duck wraps and deep-fried spring rolls with sweet chilli – in essence a lot of duck.
