This Christmas, InterContinental Park Lane have teamed up with world renowned chocolatier Paul A. Young to create a limited-edition afternoon tea, which is nothing if not indulgent.
Cramming in all the different Christmas flavours into bite-sized parcels, you’ll start with warm stilton, chestnut and walnut vol-au-vents, venison and winter vegetable puffs and traditional sandwiches such as turkey and sage in clove mayonnaise, smoked salmon, crayfish and prawns in Marie Rose sauce and honey roast ham hock with cranberry and roasted pineapple chutney.
Following on from scones served with orange curd, strawberry jam and clotted cream will be Paul’s creation inspired by winter wonderlands and delivered on a bed of snow-dusted cacao nibs and edible pebbles. There is a smoked crackling embers tart, which as the name suggests is reminiscent of an open fire; it’s a gingerbread spiced pastry tartlet filled with Venezuelan chocolate ganache. Chocolate shells are filled with chocolate ganache, orange, cranberry compote and salted caramel hazelnuts to create chocolate Christmas spheres and winter pods will see a white chocolate water ganache infused with mincemeat and served in a 65% Grenadian Kalingo dark chocolate cocoa pod.
Not that you ever need an excuse to spend an afternoon in a hotel feasting, but if you did want one, it would be Christmas and it’s now less than a month away…
