Mamalan x Dan Doherty Dumpling Takeover

October saw the opening of Ning Ma’s 5th Mamalan restaurant, serving up food inspired by Ma’s grandfather’s market stall in Bejjing. When we think of food sold in the Beijing markets, we often think of dumplings, indeed, Mamalan has a selection of dumplings on offer and to celebrate the opening of her 5th restaurant, Ma is teaming up with some of London’s most creative chefs to host a series of dumpling takeovers, bringing together different cultures in the form of exciting flavour combinations packaged in the little steamed parcels.

The first in the series of collaborations will be Dan Doherty of Duck and Waffle fame. It figures that duck features in his dumpling creation but along with said duck, the dumpling will contain salted cabbage, warming spiced duck broth, roasted chilli oil with fragrant coriander and spring onion. However, these will only be available for two weeks, so we’d get to Mamalan fast, but no doubt Ning Ma has exciting future collaborations in store – a little birdy tells us Meat Liquor are up next…

Dan Doherty’s duck dumplings will be on the menu at all Mamalan restaurants from 14th-30th November
