Peruvian chef Virgilio Martinez’s restaurant, Central, is currently ranked 4th in The World’s 50 Best Restaurants. In an ideal world, we’d be in Peru just for a taste of his food, alas, we don’t live in an ideal world, however, this December, Martinez is hosting an exclusive one off event at LIMA Fitzrovia, bringing the flavours of Central to London.
Bringing some of the rarest ingredients from Peru, Martinez will be creating meringues from clay from the altiplano (where the Andes are at their widest), he’ll be garnishing Peruvian paiche fish with edible huacatay (Peruvian black mint) flowers. There’ll also be a number of dishes paying tribute to one of Peru’s keys ingredients: corn. Guests can expect yellow and purple corn cakes, corn broth ceviche and fried corn silk with corn leaf stock. The event is set to be an exploration of ingredients coming from Peru’s varying altitudes and ecosystems, and since it is one of the world’s most accomplished chefs heading up the event, you know you can expect something special.
