Roast dinner. A British staple, we have all become that snooty connoisseur when a Sunday roast is mentioned. But any Londoner worth their salt knows that it is Borough Market’s very own Roast Restaurant that is famed for serving one of the best roast dinners in the capital. This February, Roast is set to take things further with the launch of their tasting menu, the Sussex Breed Horn to Hoof. This marks the first in a brand new series of tasting menus at the restaurant, taking place throughout the year.

Head chef Stuart Cauldwell, one of Roast’s Sussex-based farmers, has collaborated with the London restaurant to create a menu showcasing the impressive breed of cattle, ranked amongst the best in the UK. Stuart’s menu seeks to celebrate the cow in its entirety, with dishes such as oxtail broth with smoked brisket and truffle ravioli, and Sussex tongue and cheek porter pie with horseradish and bone marrow. The lesser-known cuts are set to craft an exciting and surprising array of dishes, which have been unappreciated in the past. Waste not, want not, we say.
