It’s not been a vintage year for good news, and never more so than in the hospitality sector. But there are different ways you can deal with it, and Cartografie founders Kae Shibata and Sven-Hanson Britt have definitely gone about things the right way.
At the height of lockdown, the best pastry at The Ritz, Kae, decided now was the time to go into business with her partner, Masterchef The Professionals winner Sven, to create something completely new. Pheonix-like from the ashes of the pandemic, the pair have launched Cartografie, a chocolate shop you will certainly be hearing about in future.
Be whisked away into a chocolatey heaven by Kae and Sven from the comfort of your own kitchen as you receive a bespoke truffle kit in the post then tune in to one of two live classes hosted by Cartografie this December.
The Zoom masterclasses, held on Saturday 12th December and Sunday 13th December are limited to just 20 places each and (including all the ingredients, so they’re practically giving it away!) cost £20 to join. A deal that’s nearly as sweet as the chocolate you’ll be making.

The masterclass is a chance to get to grips with the technicalities of making the perfect chocolate truffle, but also to get to know the fascinating founders behind Cartografie and the principles that guide them. Like only sourcing chocolate from ethically-minded suppliers, to fight back against the devastating environmental impact of the chocolate industry. Or insisting that their business is founded on fiercely zero-waste.

And when they’re not hosting Zoom masterclasses they’re building their shop and brand from scratch. Taking a unit at East London’s trendy London City Island, rather than a bouji Bond Street boutique, is as much a statement of who they are as a commercial decision.
London City Island is a 12 acre development on the Leamouth Peninsula in East London (closest tube Canning Town) and the huge investment from housebuilder Ecoworld Ballymore has seen 1,700 homes spring up alongside artisan shops, restaurants and creative hubs, with the arts playing a central role. And so of course Cartografie fits in perfectly.
