Launching this month is Clipper Coffee Merchants, a bulk brew coffee bar in Shoreditch funded by donations from the surrounding firms in the area’s technological hub plus Kickstarter Crowdfunding. It showcases a range of single origin coffees sourced directly from growers across the world.
Clipper is rooted in the founders’ belief in touring each farm’s processing mills to connect with the workers. The venue will centre on a continually changing single origin menu, using beans sourced from small farms around the world in conjunction with James Gurr of Ozone Coffee Roasters. The raw and earthy space will allow coffee lovers to taste a range of brews, talk to coffee specialists and learn about the meticulous way in which the coffee is sourced.
A true ‘farm to cup’ establishment, Clipper will contribute 25p of every coffee sold to its origin coffee farms. The generated funds will assist in upgrading the farmers and workers’ living quarters, and help them to ‘up-skill’ to ensure they can remain focused on growing delicious, rich and complex coffee.
All of the coffee served at Clipper will be roasted just up the road at Ozone Coffee Roasters. Alongside the single origin coffees, Ozone has developed a signature espresso blend for Clipper. Using time-honoured roasting processes, each coffee is carefully roasted to highlight the unique flavour characteristics through soft brew methods.
Clipper will also feature a customised, La Marzocco Linea PB espresso machine to prepare espressos and single origin coffees. For those in need of a quick bite, it will serve locally baked bagels with fillings ranging from Lamb shoulder, Pickled onion and cheddar to House smoked salmon with sweet chilli goats cheese.
