The first of next month welcomes Dub Jam to Covent Garden. The tiny Jerk BBQ & Rum Shack fuses the laid back beach vibe of the Caribbean, with tasty, contemporary Jamaican barbecue flavours and the sounds of reggae label ‘Trojan Records’.
The kitchen will pump out a Trojan soundtrack from Bob Marley and Jimmy Cliff to Rocksteady, Dub, Ska and Roots. Aiming to capture the spontaneity of a beach party, the interior features lights made from reclaimed buoys and tin-cans, stools made from beer kegs and car wheels, a shelf bar made from half a surfboard and cake display made from an old record-player.
Even the bench seating is recycled from timber flooring. A festoon of lights made from Red Stripe stubby bottles hang from walls flyposted with graphic, original Trojan cover-art and street art inspired by Kingston’s Studio One. A homage to Duke Reid, Dub Jam’s rear wall is a stack of carnival style speakers.
The BBQ menu includes Soul Rebel Skewers marinated for 48 hours in the kitchen’s own jerk recipes and smoked for 12-24 hours before being grilled on the BBQ. Skewers include Skatalites, BBQ-ed Jerk Chicken, Peppa Pig BBQ-ed Jerk Pork, and Veggie Bangarang BBQ-ed jerk spiced halloumi and pepper – all served with home-made Sunny Slaw and a mint, coconut, chilli, yogurt dressing or fiery lime and tomato salsa. Beach Burgers are made from certified English beef packed into freshly-baked flat-bread pockets.
The Dub Jam bar will serve a choice selection of rums and Caribbean drinks, including Red Stripe, Carib Beer, Sasparilla and Coconut Water in colourful hand-painted tin cans. We even hear that the signature Wray & Nephew Reggae Infused Rum is gravity-fed through the sound-system wall of speakers so it’s slowly infused with reggae sound waves…
