Hide & Seed is a new restaurant and bar launching today in Putney within the boutique Lodge Hotel on the Upper Richmond Road.
Food will centre on flavoursome game, fresh fish, and vegetables grown on the hotel’s own farm and the menu promises to revive forgotten or overlooked ingredients making for inventive dishes. Head Chef Ricardo Soares has taken elements of his Portuguese heritage and blended them with techniques learnt from his 15 years in London kitchens.
Examples include Scallops with textures of pea, asparagus top, roasted tomato dressing, Fish with bread and coffee – langoustine with coffee poached brill, bread broth and coriander, Allotment Vegetables with zaatar spice and crispy potato, Cabrito Goat with carrot, rosemary potatoes and sprout tops, Halibut with roasted cauliflower puree, kale salt and purple potato and Heaven Sent Rosemary and Almond featuring strawberry and rhubarb caramel, beetroot and cream cheese sorbet.
The 30 cover restaurant is spread over two distinct areas: The library is a 12 cover dining room with natural fabrics, russet woods and leather bound books and the lounge area is a light filled space with large tables and comfy seating.
The bar features a curved textured granite bar, antique mirrors, animal hides and beautiful glassware. Cocktails have been created using fresh berries, herbs, flowers and quality spirits and include Jack’s Hive – Jack Daniels, lime and honey with cranberry and rosemary, Greenhouse – Havana rum, sugar, angostura bitter, mint and lime and Madagascan Plantation – rum, vanilla, pear, sugar and Champagne.
