MasterChef Professional Opens His First Restaurant

In 2011, Welsh chef, Tom Simmons was the youngest competitor to get to the quarter finals in MasterChef – The Professionals, now in 2017 he is opening his first restaurant, which will also be the first restaurant to open in the new One Tower Bridge development (The Ivy is set to follow.)

Originally from Pembrokeshire, Tom’s respect for nature and cooking will be a central part of the restaurant, both in the design (which will use natural materials such as Welsh oak and slate alongside displayed scenes from the Welsh countryside) and in the menu which will use produce such as Welsh lamb from Preseli Blue Stone, Orkney scallops from Keltic Seafare and foraged mushrooms from Fine France.

He’ll be bringing together British and French cuisine with an emphasis on his heritage to create dishes such as: roast cod loin, asparagus, haddock scotch egg with hollandaise; salt baked beetroot, goats cheese and apple salad; braised ox cheek with pommes puree and bourguignon sauce and for pudding, rhubarb panna cotta with Granny Smith sorbet and ginger biscuits. You can also order dishes as small plates to have at the bar or nibble on snacks such as cockle popcorn with laverbread mayonnaise.

It’s set to open this spring, which we’re now  in, so the countdown begins…
