Kurt Zdesar might not be a name you recognise, but you’ll definitely have heard of his restaurants; he’s the man who launched Chotto Matte and brought Nobu to London and now he is about to launch Bouillabaisse in Mayfair.
The seafood restaurant, which you’ll find on Mill Street is inspired by Kurt’s travels to coast communities, from lunches sunny fishing villages in Italy to day-boat fisherman in Greece and even our own shores here in the UK. The result is a menu made up of the freshest and most sustainable fish and seafood in the UK.
The man behind the menu is Executive Chef Jordan Sclare, previously of Chotto Matte, Nobu and Restaurant Gordon Ramsay. Dishes will include Hebridean langoustines with fresh basil and white balsamic reduction, Snow crab cakes with garlic and herb salsa, lobster ravioli and of course as the name suggests a Bouillabaisse made with prawns, sole, clams, mussels, langoustines and lobster.
With a relaxed, informal atmosphere, the 80-cover restaurant will be split across two floors. Downstairs a large Chef’s Table with space for 20 guests will lead through to an open kitchen. Jordan Littler has overseen the design which captures textures and looks from seafaring communities; expect to find distressed wood, copper, brass and black brick. The walls will also be home to frosted glass fish tanks – so you know your fish is super fresh.
With further sites and other concepts confirmed for Mortimer Street, Chiltern Street and Wimpole Street this year, it looks like Kurt Zdesar is working on his restaurant empire and Bouillabaisse is his next victory.
