With CVs that include Claridge’s, The Square, Noma, Polpo and Polpetto and two acclaimed residencies under their belt, it’s time that Ben Marks and Matt Emmerson opened a restaurant. So, it’s pretty good really that they are next week, isn’t it?

Opening in Newington Green on November 8th, Perilla, will combine refined cooking with unpretentious surroundings. Using seasonal ingredients, Ben will be cooking up a menu that focuses on modern interpretations of classic European dishes. You can either choose the a la carte or go for the five-course set menu, which will showcase signature dishes. And who wouldn’t want five when we’re talking about the likes of seaweed bread brushed with roasted lamb fat; roast kale with cod roe; fried duck egg with chopped mussels and cuttlefish bolognese? For pudding, you’ll find preserved plum custard and pears poached in wine and citrus.

Over at the bar, there’ll be a succinct wine list from Europe, whilst gin from small batch distilleries will be the focus for the cocktails as well as Perilla’s own infusions which will be in jars behind the bar.
Designed by Red Deer Architects, Perilla will feature large windows, handcrafted raw materials, vintage furniture and light fittings. Tables will be made from up-cycled wooden barn doors and floors will feature original yellow black terrazzo tiles which were discovered during the building work.

Perilla, we’re going to say it’s fine dining but as if your friends are cooking for you… friends who are just very good cooks.
