Four years ago Tom Gibson opened Ruby’s Cocktail Bar in Hackney which saw it soon rise as one of the top bars in east London for cocktails and in January 2016 Tom will be back with the opening of Ruby’s Bar and Lounge.
Opening adjacent to the cocktail bar, Ruby’s Bar and Lounger will of course be serving up their legendary cocktails, but they’ll also be joined by a predominantly Italian and French wine list created by Clapton wine bar, Verden. Carrying on London’s new love affair with Vietnamese food they’ll have Vietnamese street food specialists Hanoi Kitchen cooking up bar snacks and large plates with highlights said to include chargrilled lemongrass lamb chops , chilli and ginger soft shell crab.
Castle Gibson has had a hand in the design and furniture and they’ve take inspiration from The Tottenham Royal where Tom’s grandparents in the 1960s, so you’ll find faux marble table tops, gold touches, cream surfaces, ritzy brass palm trees, plush padded leather and a mix of tables and intimate booths.
Throughout the week live music and other acts will take to the stage area and come the weekend DJs will take to the decks – because every great cocktail needs a great soundtrack.
