Joining London’s group of sky high restaurants is the latest Searcys restaurant, Urban Coterie. In collaboration with Anthony Demetre ( who launched Arbutus and Wild Honey), the restaurant will be opening on the 17th floor of the M by Montcalm hotel in the City.

 Heading up the kitchen will be Head Chef Martin Zahumensky (formerly at Texture andHibiscus) who will be serving a menu that will be changing monthly to reflect the changing flavours of seasonal ingredients. 

For starters you’ll find the likes of Brixham crab, apple and celeriac and ox tongue with green vegetables, crisp tripe and oyster mayonnaise. Main dishes include pork belly, carrots, grapefruit and liquorice; grilled monkfish with cockles, kale rosemary and anchovy vinaigrette and shin of veal with roast vegetables to share.  Puddings include English custard tart and warm chocolate mousse with toasted rice ice cream. 

The Sky Bar will be serving classic cocktails inspired by  the British landscape such as the After a Walk in the Forest – a mix of vodka, vermouth, pickled mushrooms and walnuts; or the Hays & Plums a recipe inspired by the rural Dales which uses fresh lemon, plum puree, hay syrup, Sacred gin and Peychaud’s Bitters. To go with the drinks will be snacks, but these aren’t your average olives and breadsticks, instead you’ll find Pigs head with ‘ndjua’ mayonnaise and potato doughnuts with parmesan.

 London based designers TONIK. Associates are taking inspiration from the building’s architecture to create the interior, they’ll be using brass, timber, bianco marble and leather to soften the look. There’s a private dining room which will seat twelve and early next year they’ll be opening the Urban Coterie Private Member’s Club on the 16th floor.
