Modern dining, ancient techniques – that’s what is going to be happening at Smoke & Salt, a one -year residency popping up at Chapel Bar in Islington.

The 30 cover restaurant is the work of chefs Remi Williams and Aaron Webster who met whilst working for The Gladwin brothers (The Shed, Rabbit) in Notting Hill and now they are taking bold and adventurous flavours and using techniques such as curing, smoking and preserving to create their tasting menu.

Consisting of five courses, all for a rather nice, £38 the menu will be served during the evening Monday – Thursday and will include the likes of sourdough bread, pretzel and whipped olive oil butter; grilled spring lamb with green garlic, sunchoke and pickled okra and pink grapefruit, pink grapefruit cured, elderflower yoghurt and pound cake.

Accompanying the menu will be a succinct, interesting selection of handpicked cocktails, beer and (music to our ears) well-priced wines. Sundays will be the time for all-day brunch but for now details are still being kept under wraps but keep an eye out!
