Tabun Kitchen Opens

The ‘tabun’ oven has been on the streets of Jerusalem since pre-Biblical times and yet it has only reached the streets of London this week…we have some catching up to do.

Opening in Soho, Tabun Kitchen will use founder, Hanan Kattan’s, family recipes to bring authentic, quick and affordable Middle Eastern dishes. Having grown up in a Palestinian family in Jordan, Hanan knows all about the importance of home-cooked food and good hospitality and will be bringing that to Berwick Street.  The menu leads with wraps that are made from high protein flour making them easy to digest and light to eat, ideal in these balmy temperatures. Fill them with lean chicken, falafel, lamb or Mussakan, a traditional Palestinian filling which uses marinated chicken, softened onions, roasted pine nuts and sumac. If you want to skip the bread then layer the fillings with salads, tabbouleh and pickles.

Breakfast will be the time for Shakshuka or Greek-style yoghurt with honey and crushed pistachios, whilst in the evening there’ll be an ever-changing menu. Start with mini mezze to try the many flavours of the Middle East. Follow with modern twists on home-style cooking, add in salads, marinated olives and crisp fries dusted with a thyme based zataar spice mix. Finish with pudding and Middle Eastern cocktails.
