Opening tomorrow in the City is a new concept venue specialising in Champagne and informal dining and promising one of the largest selections of Champagne and sparkling wines by the glass in London, alongside an innovative menu of tasting plates.

Tirage is an all-day dining venture from Venezuelan-born businessman-turned-restaurateur Elio Machillanda that will pair both familiar and lesser-known grower or rare labels from a 120-strong sparkling wine and Champagne list (15 – 18 of which will be available by the glass) with plats from Head Chef Alasdair Fraser (The Abingdon in Kensington) inspired by the traditional of French cuisine and of-the moment palate of Peru.

A Champagne breakfast option features Boiled Truffle Eggs with bread sticks and parmesan shavings are washed down with house label Perrier Jouët Grand Brut Champagne, followed by Boudin Blanc with Jacquesson Cuvee, and rounded off with fluffy Blueberry Pancakes drenched in cinnamon butter and thyme honey paired with Olivier Coulon Tradition.

Menu highlights include Cornish scallop ceviche with baba ganoush, Grilled streaky bacon, coriander crisps and pomegranate and sorrel flower reduction, Star anise honey-roasted duck breast with plum sauce and pancakes to Pan-fried foie gras with caramelised pear, Chilli popcorn, kaffir lime and blini.

The venue is furnished with stylish high tables, leather stools and banquettes. There are two private dining rooms available for group bookings and events and there will also be a retail element, allowing customers to take-away their preferred choice of bubbles. An advisory role has been played by Michelin-starred restaurateur David Moore (Pied à Terre, L’Autre Pied, Pieds Nus).
