2014 was the year that Stoke Newington welcomed Primeur, and now Jeremie Cometto-Lingenheim and David Gingell are back with their next restaurant in Lower Holloway…or as we like to call it, LoHo.
To get to Westerns Laundry you’ll need to pass through a feather blade fence and entry code gate, before crossing the forecourt, planted with Himalayan birch trees and dotted with benches, designed and made by Jeremie. Lining the way will be cobbles which once lined the gangway at King’s Cross Station, they’ll lead you right up to the floor to ceiling crittall doors – if you’re not clued up on your doors, think big panes of glass and industrial-esque frames.
Inside, the restaurant will be centred around a chalkboard which shows the daily changing menu of seafood and dishes made from the best produce from the British Isles. Communal tables join banquettes made from Shou Sugi Ban charred larch and electric blue British velvet, lit by incandescent strip lights which are now discontinued worldwide – not at Western Laundry though. Two centrepiece paintings by Katie Boxer will hang in the dining room – one of American poet and playwright James Baldwin and the other a hungry lion – he says ‘I won’t eat you’ but we’ve all said that about cakes before and it’s never been true.
They’re going to see what the day boats in Devon and Cornwall have caught before they create their menu but expect to find the likes of sea bass and seaweed tartare, raw scallop with Le Coste olive oil and dishes with Asian influences like chargrilled mackerel with miso and chilli. If meat is more your thing, then there’ll be pork loin with chopped greens, basil and capers and beef rump with roast garlic butter and croutons. Finish with green apple sorbet and custard tart.
There’ll be over 200 bottles of wine, they’re going to be big on low intervention, small scale, international producers. Get your hands on the black book which will reveal fine wines and older vintages or drink specialist Belgian beers and small batch hand-picked vermouths.
