Penfolds Bin 389, £60
First developed in 1960 by Max Schubert, the brand’s former boundary-pushing winemaker known for creating the iconic Penfolds Grange, this is one of the wines that’s helped forge Penfolds reputation with red wine lovers. It’s renowned for its long-ageing potential – the 2021 vintage is expected to be at peak drinking between 2025 and 2055 but can be enjoyed now.
On the nose: Combining the structure of cabernet sauvignon with the richness of shiraz, a kaleidoscope of aromas will surface. Think sweet pastries with a nod to fresh blackberries and mulberries to begin, followed by notes of pink peppercorns, dried bay leaf, black cardamom and an aniseed/liquorice finish.
On the palate: Expect flavours of black fruits, red fruit compote and cocoa powder sweetness to erupt, while savoury flavours like cold sliced salted beef, cured pastrami and roast lamb cooking juices balance out the sweetness. It’s ideal for Christmas, pairing brilliantly with roast beef and venison dishes.

On the nose: It beholds a range of sweet and savoury notes, with a rich umami aroma prevalent, as well as touches of dried rosemary, oregano and floral violet notes.
On the palate: Its rich flavours come into focus, with mocha, chocolate and espresso highlighted, while confectionery flavours include liquorice, chocolate truffles, black jellybean and rum and raisin surface. Expect a long and satisfying finish.

Penfolds Max’s Chardonnay, £20
For the white wine lovers, Penfolds Max’s Chardonnay pays homages to former Chief Winemaker Max Schubert.
On the nose: Pale gold in colour, the first aromas to rise include honeydew, melon and white peach. While grapefruit citrusy notes finish, complemented by lemon/lime curd, pistachio nuts, cashew, nougat and a subtle rock flint character.
On the palate: Subtly balancing ripe white peach, finger lime and lemon sorbet, these palate notes are slotted alongside a sweet, creamy biscuit reminiscent of cheesecake. It’s great served with Christmas turkey or goose.
