If there are two things getting us through this heat wave it’s Dyson fans and copious amounts of ice cream. Sure, we moan when it rains half the year, but this heat is too much, London is simply not cut out for it.

So, we’re thrilled to find a new pop-up ice cream joint in one of our favourite city spots, from the team behind one of our favourite London restaurants. And did we mention it’s utterly Instagrammable too?

Skye Gyngell’s Somerset House restaurant, Spring has launched a pop-up container outside, in the sunshine, of the iconic courtyard and they will be serving up warm weather appropriate delights right through until the end of September.

Named ‘Spring in Summer’ the cute container has been painted millennial pink to capitalise on those Instagram shots, but the treats they are serving up through the hatch are equally as photogenic too.

As with all of Skye’s creations, the ice creams on offer are pretty, packed with flavour and subscribe to her seasonable ethos.

Think sweet Peach or tongue tingling Lemon and Jostaberry Ripple if you’re after something a little fancy.

The best bit? Order your scoop of choice in a cone, tub, or our favourite, sandwiched into freshly baked brioche buns.

For days when the temperatures are soaring above 30, slurp on the in-house made granitas topped with softly whipped Heckfield Home Farm cream and ice lollies in flavours like Fior di latte or Elderflower.

There will also be a menu of more substantial offerings, namely Spring’s sourdough toasted sandwiches, from Prosciutto cotto with Montgomery cheddar and wholegrain mustard to Neal’s Yard Dairy three cheeses with sage butter. Yum.

And in the drinks department there will be everything from ice chocolate to a punchy negroni, beer to strawberry and verbena sparkling cordial, too.

All set in the gorgeous grounds of Somerset House – we couldn’t think of a more summer-perfect, London pop-up.

Spring Into Summer pink container will be open Thursday to Sunday, 12pm-6pm, until the end of September.
