Chablis Is The Wine On Everyone’s Lips Right Now

There’s something about a glass of Chablis that just hits the spot. Crisp, fresh, and effortlessly elegant, it’s the kind of wine that doesn’t require sommelier-level knowledge to enjoy. Produced in France’s Bourgogne region, Chablis slips easily into real life. It’s as at home with oysters at a restaurant as it is with fish and chips by the sea. It’s easy, stylish, and always a sound choice.
In Partnership With Chablis Wines
To help us get to know Chablis better, we’ve teamed up with Lucy Hitchcock [pictured: right], wine expert and founder of Partner in Wine. Lucy’s all about making the wine world less intimidating and more enjoyable. Because, let’s be honest, most of us only care about whether the wine actually tastes good.
We asked Lucy for her top wine recommendations for every type of occasion. Here’s what she had to say.
Top wine picks
For a casual dinner with friends
“When you want something everyone will love, reach for a Petit Chablis light, zesty, and effortlessly easy-drinking.” Think olives, charcuterie boards, and endless small plates. Lucy recommends Petit Chablis, 2023, Domaine Jean Collet et Fils, which has that crisp citrus and mineral character that makes early evening sipping so easy.

I love the idea of wine that’s about mood rather than mastery. Chablis feels like something I’d happily open on a Friday night with friends, stylish, but never trying too hard. I’m definitely in the mood to feel a little Bourgogne.

For a weekend brunch
Swap the usual fizz for a classic Chablis, perfectly balanced and versatile. Try the Chablis, 2022, Domaine Orion, with green apple, subtle saline edge, and vibrant acidity, or Chablis, Le Finage, 2023, La Chablisienne, crisp and citrusy with a touch of stone fruit. “It’s elegant, fresh, and, honestly, might make you question ever having champagne for brunch again.”
For a celebration or gifting
A Chablis Premier Cru is the ideal choice. Lucy loves Lucie Thiéblemont’s Chablis Premier Cru Les Fourneaux 2022, with bright citrus, white peach, and a gentle mineral edge. “It looks the part and tastes even better,” Lucy says. “Perfect for a special occasion or as a thoughtful gift.”
For a romantic night in
For something a bit more special, a Chablis Premier Cru adds richness and depth. Perfect with roast chicken, creamy pasta, or buttery seafood dishes, these wines feel elegant but never intimidating. Lucy’s top pick: Chablis Premier Cru Fourchaume 2023, Jean-Marc Brocard, “for exotic pineapple and mango notes, hints of honey, and a refreshing mineral finish.”
I’m always the one bringing rosé, but I’m curious to mix things up. Chablis feels like a sophisticated alternative that still fits my vibe, fresh, relaxed, and best shared over a long lunch somewhere sunny.

For after-work drinks
Need a safe, stylish choice that’s unlikely to offend anyone’s palate? Go for a Petit Chablis, like Petit Chablis, 2023, Samuel Billaud. Fresh, lively, and approachable, it’s the wine that turns ‘just one glass’ into a mini Friday night event. “Petit Chablis is like a reliable friend… It’s approachable, crisp, and easy to enjoy, perfect for moments when you want a little sophistication without fuss,” explains Lucy.
For lunchtime hosting
Chablis makes simple meals feel special. Chablis, 2023, Domaine Billaud-Simon is crisp, fresh, and perfectly balanced, great with pan-fried sea bass, lemon-and-garlic pasta, or buttery vegetable dishes. Lucy notes, “Chablis works beautifully with white fish and anything lightly sauced; it lifts the dish without stealing the show.”

Anything that pairs well with seafood and an evening with friends sounds like my kind of bottle.

Why we’re feeling Chablis right now
What makes Chablis so appealing is how approachable it is. You don’t need to recite tasting notes or debate acidity levels, you just need to pour a glass and see if you like it. From affordable bottles at the supermarket to something more refined for a celebration, there’s a Chablis for every taste and occasion. Because at the end of the day, wine doesn’t have to be complicated—it just has to be good.
That’s exactly what Chablis is about, it’s not about knowing, it’s about feeling. You don’t need to memorise grape varieties or tasting notes to enjoy it. Just pour a glass, take a sip, and let it match your mood. Wine should be about pleasure, not pressure.
