You know what we could really do with a good old dose of? Sun, balmy temperatures and holiday to a paradise-esque island. Of course money and time stands in our way. So we’ll have to suffice with a little slice of sunshine in London with the announcement that next month will see the opening of the third Cottons Caribbean restaurant and Rhum Shack.

Following the first two restaurants in Camden and Shoreditch, the third offering, which will be the flagship venue is opening in Notting Hill and will be home to the largest rum collection in the UK – we’re talking 300 different bottles. Yes 300 and they’ll be used in cocktails such as Reggae Rum Punch, Killer Doppis and Piña Coladas.

Cooking up a new menu of Caribbean dishes will be Executive Head Chef Laurent Desiree who has made appearances on both the UK and Caribbean MasterChef and Head Chef Ross Sloane. The pair will be using sustainably sourced and foraged ingredients to create vibrant, fresh dishes.

With steel drum evenings and more rum than you know what to do with, next time you’re in need of a slice of sunshine you know where to head.
