Head to Spitalfields Market and you’re likely to find Galvin Café A Vin, well you would have, because now it’s been given a transformation and turned into Galvin HOP – a Galvin Pub de Luxe.
Of course it’s not your average City boozer, there’s no mismatched kitsch carpet or red velvet stools for starters. Instead you’ll find a front terrace for summer months, new flooring, classic motifs but in a modern style, tiled walls and four large copper tanks, three of which will be sitting above the bar holding unpasteurised Pilsner Urquell. Accompanying this will be bottled and canned craft beers and a boutique selection of wines on tap from OW Loeb & Co.
The menu, created by brothers Chris and Jeff Galvin, will centre around classic pub dishes made from seasonal ingredients; think slow cooked beef cheeks in stout and caramelised carrots; Galvin cured smoked salmon with soda bread, charred beetroot and goats’ curd salad; grilled Suffolk pork and cider braised onions and flatbread with tuna and smoked aubergine. Breakfast will include egg and bacon rolls, toasted muffins and Eccles cakes. Galvin HOP will also see the introduction of the ‘Luxe Dog’ a range of gourmet hot dogs which you can eat in or takeaway. Forget your average American mustard though, these are served with Maille’s premium, seasonal mustard served fresh from the pump.
The new kitchen will also be used as a development kitchen for the other Galvin sites; it’ll also be the new flagship London pub for the recently created Galvin Pub Co. with the second pub Green Man in Chelmsford this summer.
