They met whilst working together at London’s Barrafina restaurants and now chef Nives Barragan Mohacho and business partner José Etura are opening their own restaurant, bar and asador: Sabor.
Prepare for a journey through the tapas bars of Andalucia, the asadors of Castile and the seafood restaurants of Galicia, as the menu captures the flavours (sabor is Spanish for flavour) of the pairs’ native Spain.
On the restaurant menu you’ll find daily changing seafood, (depending on what they can get at the market) and the likes of wild rabbit empanadilla and diver caught scallops with five jotas ham consome. In keeping with Spanish restaurants, the kitchen will be open, and diners will sit at the counter, so you can see everything being prepared.
Along with the restaurant, the bar will also be on the ground floor. The drinks list revolves around vermouth, Spanish gins, sherries, txakolis, Spanish wines and beers. To eat you’ll find tapas dishes such as: cured presa iberica; black trumpet croquetas with black truffle and crisp fried chicken oyster bocadillo. At the end of your night throw your napkin on the floor – no you’re not littering, you’re showing that you like it, yep they do that in Spain.
If you don’t want to eat in the restaurant or the bar, then you need the asador. Head up the spiral staircase where you’ll find large sharing tables, an open kitchen and the asador itself, which, if you don’t know, is a wood fire oven. Focusing on the Galicia and Castile regions of Spain, you’ll find the likes of empanada Gallega; fish on the bone and Txistorra, butifarra and cabbage. Mainstays on the menu will include Pulpo a Feira (octopus) and suckling pig.
In summary, Sabor is a smorgasbord of Spanish snacks and sherries. Now try saying that after a few vermouths.
