From high-end restaurants to neighbourhood cafes, chefs are finding creative ways to use this classic British ingredient. Known for its pretty pink and red stalks sourced from Yorkshire’s rhubarb farms, rhubarb is turning up in desserts, cocktails, and baked goods, and we’re all here for it. Here are some of our favourite rhubarb dishes we spotted on menus in London:
The Montagu Kitchen
The Montagu Kitchen has freshly launched rhubarb and crème fraîche stones that offers a delicate Wye Valley rhubarb compote nestled within a silky crème fraîche mousse, accompanied by a refreshing rhubarb sorbet and rhubarb gel. Poached rhubarb adds a tender bite, while a crisp meringue stick and buttery vanilla crumble provide the perfect contrast in texture. Finished with a touch of lemon balm cress, this elegant dessert is a celebration of seasonal balance.

The Tudor Pass
Located within The Great Fosters Estate, near Windsor in Surrey is the Michelin-starred restaurant, The Tudor Pass. On the 7-course signature dinner menu is the Poor Knights of Windsor dessert that’s basically bread soaked in a mixture of egg and cream, then fried in butter and served with fruit. For The Tudor Pass version, they use Yorkshire forced rhubarb and poach it in a hibiscus liquor.

Dalloway Terrace
The seasonal menu at the lovely Dallloway Terrace has been reimagined for spring and there’s lots to enjoy amidst the stunning floral display here. We love the indulgent Yorkshire rhubarb and custard cheesecake with raspberry sorbet that’s best enjoyed with a gorgeous gin cocktail – it’s the perfect spring treat.
